Designer Beef of Texas has built a ground up private processing center located right on premises. Here our expert team handles the humane harvesting, processing, dry aging, and butchering of your beef.
This facility is one of the many key pieces that sets Designer Beef of Texas apart from other direct to consumer ranches.
The "other guys" often work with 3rd party butcher shops or large scale processing facilities. Upon reaching harvest weight, the animals must either be transported alive prior to slaughter. Which skyrockets stress levels and spoils your beef. Or slaughtered prior to transportation, which if not done properly can lead to contaminated beef.
Many of these commercial facilities can touch up to 5000 head of cattle a day! This has raised concern for many customers, and caused a high level of distrust amongst customers, butchers, and ranchers.
Some studies have revealed ground beef from these facilities can contain up to 400 unique strains of DNA! That right 400 cows worth of beef mixed into a 1 lbs pack of burger!
As a Designer Beef of Texas customer, you can rest easy knowing that we harvest all cows in a quick, efficient, and stress free manor. Immediately after harvesting your beef cow, our processing team goes to work carefully preparing the beef carcass for the complex dry aging process.
Your entire beef package will hang in our dry ager for a minimum of 30 days to ensure tenderness across all your various cuts, roast, and even hamburger meat (Designer Beef of Texas Exclusive). A majority of our customers choose to take advantage of our extended 60 day dry aged option. With the extra hang time the enzymes in the meat begin to intensify the beefiness and add nutty or buttery notes to its flavor profile!
Once the aging process is completed, our master butcher team goes to work butchering the animal according to choices you made with our cut team. Our beef, Your way!
Each of your custom cuts will be individually packaged, vacuum sealed, labeled, and flash frozen to ensure freshness for up to 18 months in your freezer!
